Fried Pork Chops (Chuletas Fritas)
8 garlic cloves, peeled 1 tablespoon Adobo 1/2 cup olive oil white vinegar to taste (or sour orange-naranja agria) 6 center-cut pork chops 3 cups corn oil In a mortar, crush the garlic. Add the adobo, olive oil, and vinegar or sour orange. Use the mixture to season the pork chops. Heat the oil in a skillet. Drain any excess olive-oil mixture from the pork chops. Fry until golden brown.
