CHICKEN-CHEESE CANAPES
2 c chopped cooked chicken
3/4 c mayonnaise
2 scallions, minced
1/2 tsp dried basil
1/4 tsp dried thyme
1/4 tsp freshly ground pepper
1/2 cup grated swiss cheese
1/2 cup grated parmesan cheese
4 english muffins, split
Preheat oven to 350ø. In a medium size bowl, combine chicken, mayonnaise & scallions. Blend in basil, thyme & pepper. Add Swiss cheese & 2 tbsp. of the Parmesan; blend well.
Spread chicken mixture over English muffin halves, dividing evenly.
Sprinkle w/ remaining Parmesan cheese. Arrange on a foil-lined baking sheet & bake about 10 minutes until browned on top.
Cut muffins into quarters and serve hot.
