Veggiewiches rec.food.veg.cooking/Janette/2002 Makes 4 sandwiches
1 (8 oz.) container soft-style cream cheese 3/4 cup carrot, shredded 1/4 cup green pepper, chopped 1/4 cup cucumber, chopped 1/4 cup onion, chopped 1/4 cup celery, sliced 1 tbsp. lemon juice 1/4 tsp. pepper 8 slices rye or pumpernickel bread lettuce
In a mixing bowl combine soft-style cream cheese, carrot, green pepper, cucumber, onion, celery, lemon juice, and pepper. Chill, if desired.
Spread vegetable mixture on half of the rye or pumpernickel bread slices. Top with lettuce and remaining bread slices.
