Oatmeal Cake with Broiled Coconut Topping
Source: Something's Cooking with the South Dakota Lions and Lionesses cookbook.

Combine and cool:
1 cup quick oatmeal
1 1/2 cups boiling water.

Mix in separate bowl:
1 cup white sugar
1 cup brown sugar
1/2 cup shortening
1 teaspoon cinnamon
2 eggs

Mix thoroughly and then add:
1 1/2 cups flour
1 teaspoon soda

Add oatmeal mixture. Pour into a 9x13-inch greased and floured cake pan and bake 40 to 45 minutes at 350 degrees F. Test with toothpick.

Topping
6 tablespoons melted butter
1/4 cup milk
1/4 cup nuts
3/4 cup brown sugar
1 cup shredded coconut
1 teaspoon vanilla

Combine topping ingredients and spread on cake while warm then brown under broiler.
