Readers Digest Strawberry Shortcake Biscuits
Source: Reader's Digest, October 1991
Makes 9 biscuits

3 cups flour
2 1/2 Tbsp. sugar
4 1/2 tsp. baking powder
3/4 tsp. cream of tartar
3/4 tsp. salt
1 1/2 sticks (3/4 cup) butter or margarine, chilled, diced
3/4 cup milk
1 egg, beaten
Fresh or frozen strawberries or other berries, if desired

Preheat oven to 400.

Sift together first five ingredients (or mix with a fork). Cut in chilled butter. Stir in milk and egg. Mix to form a dough.

Knead dough once or twice on a floured surface. Shape into 1/2-inch-thick square. Cut into 9 (3-inch) biscuits. Place on cookie sheet.

Bake 15 minutes. Split warm biscuits and top with your favorite fresh or frozen berries. (Non-dairy whipped topping may be added, if desired.)
