Banana Coconut Bars
Source: 1001 Cookie Recipes by Gregg R. Gillespie

1 3/4 cup flour
2 tsp. baking powder
1 tsp. baking soda
1/3 cup vegetable shortening
2 to 3 medium bananas, mashed
1 large egg
1/2 cup milk
1/4 tsp. fresh lemon juice
1 1/2 cup flaked coconut

Oven 350 degrees. Grease 13x9-inch baking pan.

Combine flour, baking powder and baking soda. In a large bowl, beat the shortening and bananas until smooth. Beat in the egg, milk and lemon juice.

Gradually blend in the dry ingredients. Fold in 1 cup coconut. Spread mixture evenly in prepared pan. Sprinkle remaining coconut over the top.

Bake 15-20 minutes or until the top is lightly colored, and a toothpick inserted in center comes out clean. Cool in pan on a rack before cutting into bars.
