Gramma's Swedish Sponge Cake Source: Helen Jolly "This was my gramma's recipe."
4 eggs, separated 4 tbsp cold water 1 tsp lemon extract 1 cup sugar, sifted 1/2 tsp salt 1 cup cake flour or 3/4 cup all-purpose flour 1/4 cup cornstarch
Beat egg yolks with cold water till thick and pale yellow. Add lemon extract. Gradually add sifted sugar and salt to yolk mixture, and beat thoroughly.
Sift cake flour 4 times, and fold into yolk mixture.
Beat 4 egg whites till they form peaks, BUT NOT DRY. Carefully fold into yolk mixture.
Grease only the bottom of a tube pan or 9x13-inch pan. Pour mixture into the pan.
Bake at 325 degrees for 45 minutes. Invert pan till cake is cool. Shake powdered sugar over cooled cake, or use your favorite frosting.
