One of the best - I can hardly wait for strawberry season to arrive!
Fresh Strawberry Pie
8-inch baked pie shell, not pricked sprinkle icing sugar 4 cups fresh strawberries 1 cup sugar 3 tbsp. cornstarch 1 tbsp. lemon juice whipping cream
Sprinkle icing sugar over bottom of baked pie shell.
Pick over the berries, picking out 2 cups of the nicest whole berries and hull them all. Arrange the best whole berries in a circle in the bottom of the pie shell, pointed ends up. Coarsely chop or mash the remaining berries, and put into a small saucepan.
Mix sugar and cornstarch together and add to the chopped berries, cooking slowly until mixture is thick and clear.
Remove from heat and add lemon juice. Pour this sauce over the berries in the pie shell. Chill.
Top with whipped cream and berry slice when ready to serve. TERRIFIC TASTING PIE!
You can substitute raspberries.
