Speedy Strawberry Bars
1 (18.25oz) pkg. yellow or white cake mix 1/2 c. margarine or butter, melted 1/2 c. THICK strawberry jam or preserves 1 (7oz) jar Marshmallow creme
Mix the cake mix and butter together to form crumbs. Put half of the crumb mixture in a 9x13 (I choose to use the smaller pan for THICKER bars).
Mix the strawberry jam or preserves with the marshmallow creme. Spread this evenly over the crumbs. Top with remaining crumbs.
Bake at 350 degrees for 20 minutes or until the crumbs are nice and golden and the center appears to be set (not so jiggly). Cool, cut and serve with a BIG dallop of whipped cream.
***NOTE: I haven't tried this recipe yet, but I plan on trying it today. I am also planning to experiment with exchanging the marshmallow creme with cream cheese and homemade strawberry freezer jam (I figure if I use the "runny" freezer jam and the stiff cream cheese, it will give me somewhat the same consistency as the original recipe above). I will let you know how it turns out.
