STRAWBERRY BREAD
2 eggs 1 cup sugar 1/3 cup vegetable oil 1/3 cup unsweetened applesauce 1 1/2 cups flour 1 tsp cinnamon 1/2 tsp baking soda 1/2 tsp salt 1 Tbsp freshly grated lemon zest 1 1/2 cups sliced fresh strawberries 1/2 cup chopped walnuts
Preheat oven to 350 degrees.
Lightly whisk the eggs in a mixing bowl. Add the sugar, oil, and applesauce, beating for 1 minute.
In a separate bowl, whisk together the flour, cinnamon, baking soda, salt, and lemon zest. Pour the liquid ingredients over this mixture all at once and stir well to combine. Stir in the strawberries and walnuts.
Spray 9 x 5 loaf pan with nonstick cooking spray or grease and flour the pan. Pour the batter into the prepared pan, using a rubber spatula to scrape the bowl. Smooth the top.
Bake in the center of the oven about 1 1/4 hours, until a cake tester inserted in the center comes out clean. Let stand 5 minutes before inverting onto a cake dish. Carefully turn so that the flat side is on the bottom. Enjoy!
