Easy Minestrone
3 hot links or sausage 1 cup chopped onion 1 (16 ounce) can tomatoes with liquid, chopped 2 small zucchini, cubed 3 beef bouillon cubes 3 cups water 2 cups finely chopped cabbage 1 (15.8 ounce) can great northern beans, undrained 1 teaspoon dried basil 2 tablespoons chopped fresh parsley grated Parmesan cheese
In a Dutch oven or soup kettle, brown sausage and onion until onion is tender.
Add tomatoes, zucchini, bouillon, water, cabbage, beans, basil and parsley. Simmer 1 hour. Sprinkle with cheese.
