Citrus Salsa Serves: 5
4 Roma tomatoes - red, ripe 2 oranges - large, peeled, diced 1 Vidalia onion - large, chopped 2 Jalapeno chiles - large, seeded, minced 2 tbsp (30 mL) fresh lime juice 1/4 cup (50 mL) fresh orange juice 1 tsp (5 mL) salt 1 tbsp (15 mL) SPLENDA* Granular 1 tbsp (15 mL) cilantro - fresh, chopped
Bring small saucepan of water to a boil. Blanch tomatoes for 30 seconds then rinse with cold water. Peel and chop tomatoes. Place all ingredients into a large bowl and stir until mixed thoroughly. Allow to stand at room temperature for one hour. Mix and serve. Refrigerate anu unused salsa.
Notes: Serve Citrus Salsa with baked tortilla chips or on top of grilled chicken or fish.
