Sausage and Potato Frittata
1 1/2 cups coarsely chopped red potatoes 2 LITTLE SIZZLERS® pork sausage links (12-ounce) packages cut into 1/2-inch pieces 1 cup chopped tomato 1/4 cup chopped green onion 1/2 teaspoon black pepper 6 eggs beaten 1/2 cup shredded sharp cheddar cheese
In saucepan, cook potato in boiling water 10 to 12 minutes or until tender. Drain. In large skillet, cook sausage until no longer pink. Drain, reserving 1 tablespoon drippings in pan. Add potato, tomato, green onion, and black pepper to skillet. Pour beaten eggs over sausage mixture. Cover; cook over medium-low heat 15 minutes or until set. Sprinkle with cheese. Cover; cook 2 minutes longer or until cheese melts. Cut into wedges to serve.
