Pecan Squares
Pastry: 2 cups all-purpose flour 1/4 tsp salt 1/4 cup sugar 1 cup (2 sticks) butter or margarine 2 tbsp white vinegar
Combine the dry ingredients and work in butter with fingers or pastry blender until dry ingredients have the consistency of a coarse meal. Mix in vinegar and spread dough in a 10x15x1-inch pan, shaping the dough up the sides; reserve.
Filling: 1 1/2 cups dark brown sugar, firmly packed 1/2 cup sugar 2 tbsp all-purpose flour 1/2 tsp salt 2 eggs, beaten 3/4 cup heavy cream or evaporated milk 1/2 tsp vanilla 2 1/2 cups coarsely chopped pecans
Combine all ingredients, except pecans; stir to completely blend. Stir in pecans and pour into crust.
Bake on the middle shelf of a 350 degree oven for 30-35 minutes or until filling is set and top is caramel colored. Cool completely before cutting into 2-inch squares.
Delicious served with scoops of vanilla ice cream or whipped cream lightly sweetened with powdered sugar and flavored with vanilla.
Yield: about 24 squares
