Pear Salsa
2 tbsp vegetable oil 1 med onion, chopped 1 green pepper, chopped fine 1 lg garlic clove, chopped fine 2 tbsp finely chopped parsley 1 tbsp lemon juice 1/2 tsp salt 1 tbsp chopped fresh oregano or 1 tsp dried oregano 1 tbsp chopped fresh basil or 1 tsp dried basil 1/2 tsp tabasco sauce 2 medium tomatoes -- seeded and chopped coarsely 2 to 3 pears -- peeled & chopped
Heat oil in medium frying pan. Saute onion until tender, about 3 to 4 minutes.
Add green pepper, garlic, parsley, lemon juice, salt, oregano, basil and Tabasco sauce; cook 2 minutes.
Remove frying pan from heat and stir in tomatoes and pears. Cover and refrigerate.
