This came about by experimentation, using some of my most favorite cookie ingredients. Hope you enjoy them as much as we do. Cali

MAUI CHIPPERS

4 cups all-purpose flour
2 tsp. baking soda
1 tsp. salt
1 cup unsalted butter, room temperature
1 cup plain Crisco shortening
1 cup granulated sugar
1 1/2 cups light brown sugar, lightly packed into measuring cup
1 Tbsp. pure vanilla extract
2 large eggs, room temperature
1 1/2 cups chopped macadamia nuts
1 1/2 cups flaked coconut
1 cup semi-sweet chocolate baking chips
1 cup milk chocolate baking chips

Preheat oven to 375 deg.

Combine flour, baking soda and salt; set aside.

In large bowl of electric mixer, cream butter, shortening and sugars. Beat in vanilla. Add eggs and beat well to combine. Add flour mixture and mix just until blended. Scrape down bowl and beaters. Stir nuts and chips in by hand. Drop by tablespoonsful about 2-inches apart onto ungreased cookie sheets.

Bake about 8-10 minutes. Remove cookies to a rack to cool.

Makes about 6 dozen large cookies.
