Chili-Cheese Frittata
2 packages Maruchan Ramen Beef Flavor 1 (17 oz.) can whole kernel corn, drained 1 (4 oz.) can diced green chilies 1/8 tsp crushed red pepper 3 green onions 2 tomatoes, seeded and chopped 1 cup shredded cheddar cheese 3 eggs 1 1/2 cups milk 8 olives, sliced
Cook noodles in 4 cups boiling water, reserving seasoning packet. Drain. Place in bottom of greased 2 quart baking dish. Sprinkle seasoning over. Layer corn, chilies, green onions, tomatoes and cheese over.
Beat eggs with milk. Pour over ramen mixture. Top with olives.
Bake at 350 degrees F 30 minutes until browned and set. Serve with salsa, if desired.
