Spinach Stuffed Tomatoes
4 medium tomatoes 1 package frozen spinach (10 oz) 1/2 cup Parmesan cheese, freshly grated is by far the best 1 egg, lightly beaten 1 1/2 tbsp butter, melted 1/4 tsp thyme 1/4 tsp MSG 1/8 tsp garlic salt dash of Tabasco sauce Salt & pepper
Scoop pulp fron inside the tomatoes. Salt and papper the insides lightly.
Cook spinach according to package directions (I use the microwave). Drain well. Combine spinach with the other ingredients. Place in the tomato shells.
Bake for 30 minutes at 350 degrees F.
This is one of my favorites. It comes out tasting like spinach souffle stuffed into tomatoes. I got the recipe out of a magazine I read while waiting in a doctor's office about 20 years age. I did not write down which magazine so I cannot give proper credit. - rec.food.cooking/Don Kleist /1996
