Checkerboard Cheese Bake (yellow squash, tomatoes, cottage cheese)
3 medium yellow squash 3 tsp oil, divided 1 (10 oz) spinach, thawed 3 medium tomatoes, sliced 1 cup cottage cheese, 2% fat 1/2 cup saltine cracker crumbs 1 tsp Italian seasoning 3 slice provolone cheese, cut into thin strips
Saute squash in 1 tsp oil. Saute spinach in 1 tsp oil. Saute tomatoes in 1 tsp oil.
Combine cottage cheese, crumbs, and herbs.
Layer squash, cheese mixture, spinach, cheese mixture, tomatoes in greased 8x8-inch casserole. Top with cheese slices.
Bake at 375 for 30 minutes.
