Pineapple Cookies

The following recipe is one that I've gone ape over! They are a very sweet and chewy cookie. Also, this recipe makes a lot of cookies, somewhere near 6 dozen! - Phil Nelson/1982

1 cup butter
2 1/4 cups sugar
1 egg
1 can crushed Pineapple with Juice. (about 20 oz can)
3 1/2 cups flour
1 teaspoon soda
1/2 teaspoon salt

Cream butter and sugar.
Add other ingredients and mix well.
Drop with teaspoon onto an ungreased cookie sheet.
Preheat oven to 400.
Bake 8-10 minutes.

For a variation add some nutmeg and chopped nuts.

Frosting for the cookies:
1/2 cup melted butter
3 cups powdered sugar
1 teaspoon vanilla
3 to 4 teaspoons hot water until easy to spread.
