Peanut Butter Frosting Yields 3 cups, enough to frost a 2 or 3 layer cake or the top of a 13x9-inch sheet cake
1 cup creamy peanut butter 1 stick (1/2 cup) real butter, softened 2 cups confectioners' sugar, sifted 3 to 4 Tbsp. milk 2 tsp. pure vanilla extract
Place peanut butter and butter in a large mixing bowl. Blend on low speed until fluffy, 30 seconds with an electric mixer.
Stop mixer and add confectioners' sugar, 3 Tbsp. milk and the vanilla. Blend, with the mixer on low speed until sugar is well combined, 1 minute.
Increase speed to medium and beat until frosting lightens and is fluffy, 1 minute more. Blend in up to 1 Tbsp. milk if frosting seems to stiff. Use at once to frost!
