Linguine with Creamy Pesto
2 cups fresh basil leaves, wash and pat dry 3 tablespoons grated Parmesan cheese 1 clove garlic PAMŽ No-Stick Cooking Spray 1/2 pound uncooked dry linguine 4 ounces neufchatel cheese or light cream cheese
Pesto: In a food processor using metal blade, combine basil, Parmesan cheese, and garlic until chopped. Turn processor off and remove cover. Spray a steady stream of cooking spray into mixture for 8-10 seconds; put cover back on and puree until blended.
Cook linguine according to package directions, drain and reserve 1/4 cup pasta water; keep warm.
Meanwhile, in a large skillet over medium-low heat, gently heat cheese and pasta water. Gradually stir in pesto mixture; continue stirring until smooth. Add cooked linguine to skillet and toss to thoroughly coat with pesto sauce.
Remove from heat and place in warmed serving bowl. Sprinkle with additional Parmesan cheese and salt and pepper if desired. Serve immediately. Yield: 3 servings Source: ConAgra Foods
