Cottage Cheese Spread
1 1/2 cups low-fat or nonfat cottage cheese 1 1/2 tablespoons dry skim milk powder 2 teaspoons sugar or sugar substitute 1 tablespoon lemon juice 1/3 cup chopped carrot, green peppers, tomatoes or mushrooms 1/2 clove garlic, minced 1 teaspoon low sodium Worcestershire sauce (optional)
Place the cottage cheese, skim milk powder, sugar and lemon juice in a blender and blend until smooth.
Scrape mixture out of the blender and into bowl. Stir in vegetables, garlic and low sodium Worcestershire sauce (optional).
Spread mixture on bread to make a sandwich.
