Blue Cheese And Pear Omelet Yield: 1 Serving
2 eggs 1 tsp clarified butter or cooking spray 1/4 cup (1/2 oz) crumbled Stilton or blue cheese 1/2 small pear; peel, sliced thin Salt and pepper
Beat the eggs until combined.
In a small skillet, heat the butter or cooking spray over high heat. Before the butter begins to brown, reduce heat to medium. Quickly pour the eggs into the pan. Gently swirl the pan to evenly distribute the eggs. Using a spatula, pull the edges of the omelet toward the center of the pan and gently tilt the pan so that the uncooked egg runs out to the side.
When the omelet is almost set in the center, add cheese and pear slices, distributing over the entire surface for quicker heating. Cook for about 15 seconds.
Fold the omelet in half and cook for about 10-15 seconds more. Tilt the pan over a serving plate and gently guide the omelet out of the pan.
FILLING VARIATIONS: Swiss cheese, mushrooms and ham; feta cheese, tomatoes and basil; goat cheese, smoked salmon and dill.
