Italian Cheesecake

1 white or yellow cake mix
2 lbs. ricotta cheese
4 eggs
3/4 cup sugar
1 tsp. vanilla

Prepare cake according to directions; pour into a greased 9 x 13-inch pan.

Mix the remaining ingredients together, adding eggs 1 at a time. Pour filling over cake mix.

Bake 350 for 1 hour. When cooled, store in refrigerator.

This is fast and always good. Make ahead.
