Pears in Red Wine
4 large pears, peeled, halved lengthwise, and cored 4 cups red wine (Rioja is best) 2/3 cup sugar 1 cinnamon stick 2 Tbsp. raspberry preserves
In a large saucepan, combine the pears, wine, sugar, and cinnamon. Bring to a boil over high heat. Reduce heat to low and cook 30 minutes, until pears are tender. Remove pears and set aside to cool. Discard cinnamon stick.
Add preserves to the pan, raise the heat, and boil 5 minutes, stirring constantly, until smooth.
Place 2 pear halves per plate, and spoon the sauce over them.
