Tortilla De Arroz Source: Puerto Rican Cooking by Vivian Davila
6 large eggs 2 tablespoons milk 1/2 teaspoon salt 1/2 teaspoon pepper 3 strips bacon -- cooked 1 1/2 cups rice -- cooked 2 tablespoons parsley -- finely chopped 2 tablespoons butter 1/4 cup romano cheese -- grated Beat eggs and milk until frothy. Add salt, pepper, bacon, rice and parsley.
Melt butter in skillet, pour in egg mixture. Cook until golden brown on the bottom. Flip and cook until golden brown on the other side. Sprinkle on cheese and allow to melt. Serve.
