Red Pepper Pasta Sauce Yield: 4 Servings 3 cups chopped red bell pepper 1 cup chicken broth 1 to 2 tbsp chopped fresh basil 1 tbsp tomato paste 1 clove garlic; minced 1/4 tsp salt dash Hot pepper sauce Bring all to a boil; reduce heat and simmer until slightly thickened, about 20 minutes.
Process in blender or processor until smooth.
Serve over hot cooked pasta. Garnish with additional basil, if desired. Microwave directions: Microwave covered, the pepper, onion and garlic 4 to 4 1/2 minutes until vegetables are tender. Add 1/2 cup chicken broth, tomato paste, salt and hot pepper sauce. Cook uncovered, on high 2-3 minutes. Process and continue as above.
