shortening 4 medium skinless boneless chicken breast halves -- (about 1 lb) 1 cup bite-siz cheese crackers (regular or reduced fat) 1/4 cup dry bread crumbs 1/2 cup buttermilk or milk
Preheat oven to 400 degrees. Grease baking sheet. On a cutting board with a sharp knife, cut each breast into 6 strips.
Put crackers in a plastic and seal. Use a rolling pin to crush the crackers. Pour into a pie plate. Add bread crumbs. Stir well to mix. ( or leave crackers in plastic bag and add crumbs to crackers and shake to combine.)
Pour buttermilk into a mixing bowl. Dip each piece of chicken into milk, turning to coat completely. Roll each piece in crumb mixture in pie plate. (Or, if crumbs are in bag, drop a few strips at a time into bag and shake to coat.) Press crumbs onto chicken pieces so that they stick. Place in greased baking pan.
Bake for 15-20 min or until no pink color is left in the center of the chicken and the crumb mixture is golden brown. |
