Hawaiian Bread Pudding

6 slices French bread, broken up
1/2 cup flaked coconut
2 eggs
2 cups milk
2 tablespoons rum, optional
Small crushed pineapple
1/2 cup chopped pecans
1 cup sugar
1/8 lb margarine

Place bread in microwave bowl. Mix in pineapple, coconut and pecans. Set aside.

Beat eggs and sugar together; set aside.

Heat milk and margarine on high in microwave for 3-1/2 minutes, remove and add rum. Dish beaten eggs and sugar into milk mixture then pour over bread mixture and mix well.

Put in microwave and cook for 4-1/2 minutes on high. Set for 5 to 10 minutes then serve with favorite sauce or as is.

Serves 8
