Banana Mango Bread
1 cup whole wheat flour 1/2 cup all purpose flour 2 tbl wheat germ 2 tsp double acting baking powder 1/2 tsp sea salt 1 tsp cinnamon 1/3 cup butter or margarine 2/3 cup brown sugar, loosely packed 1 tsp vanilla 2 eggs, beaten 1 cup ripe bananas, mashed (approx. 4 bananas) 1 cup ripe mango, finely diced (approx. 1 to 2 mangos) 1 tbl citrus juice
Preheat oven to 350F. Butter loaf pan.
Combine flour and other dry ingredients.
Cream together butter and sugar, adding vanilla and eggs. Mix well and gradually fold in flour mixture.
Drizzle mango with citrus juice and add with bananas to bread mixture. After thoroughly combining, pour into pan.
Bake in oven for approx. 1 hour.
