Western Egg White Omelet
PAM® Original No-Stick Cooking Spray 1 tablespoon finely chopped green bell pepper 1 tablespoon finely chopped red bell pepper 1 tablespoon finely chopped onion 1/2 cup Egg Beaters® Egg Whites 1/4 cup shredded reduced-fat Cheddar cheese, (1 ounce)
Place a medium skillet over medium heat until hot. Coat skillet with cooking spray, add green and red peppers and onion and cook until tender crisp, stirring frequently. Spread vegetables evenly over bottom of skillet.
Pour egg whites over vegetables. When partially cooked, sprinkle cheese over half of the egg mixture and gently fold omelet. Continue cooking until desired doneness.
May serve with a side of skillet grilled lean ham slices and/or lightly whole wheat toast, if desired.
