Zucchini Bread Recipe By : Judith E. Speck
3 eggs 2 cups sugar 2 cups shredded zucchini 1 cup oil 2 teaspoons vanilla 3 cups flour 1 teaspoon salt 1 teaspoon soda 1 teaspoon baking powder 2 teaspoons cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon cloves 1/2 cup chopped nuts 1/2 cup raisins (optional)
Beat eggs until foamy; add sugar, zucchini, oil and vanilla. Gradually add remaining ingredients, stir nuts and raisins in last. Pour into bread pans that have grease only on bottoms. Bake at 325F for 60-80 minutes; cool for 10 minutes and remove from pans. Let cool completely.
