Frijoles Refritos (Refried Beans)
32 oz. pinto or your favorite beans or use 4 cups homemade cooked pinto or your favorite beans 1/4 cup chopped onions 1/4 cup lard or oil 8 oz. Queso Blanco or Queso Fresco, crumbled
Place beans and juice in blender container. Blend just enough to break into small pieces, about 5 to 10 seconds.
Cook and stir onion in hot lard until tender.
Stir in beans 1 cup at a time until they are all incorporated. Continue cooking and stirring constantly until mixture thickens and you can see the bottom of the pan as you stir.
Add cheese and stir until well-blended.
Makes 3 1/2 cups
