Gazpacho Salsa
1/2 cup diced cucumbers, peeled and seeded 1/2 cup diced Roma tomatoes 1/4 cup diced red onions 1/4 cup each, finely chopped red and green bell peppers 1/4 cup fresh chopped cilantro leaves 2 medium jalapeno peppers, seeded and diced 1/4 cup orange-pineapple juice
Combine all ingredients, stirring just to blend.
