This marvelous Casserole is as good or better than a Paella & cannot be compared to a simple mixed rice.
Chofan (Dominican Chow Fan)
3 cups of rice cooked using a white rice recipe 1 lb. of boneless smoked pork chops 4 tablespoons of soy sauce 1/4 cup of boiled green peas (petit pois) 1/4 cup of boiled sweet corn 1/4 cup of leek diced finely 3 tablespoons of peanut oil (or oil of your preference) Salt (you might add chopped lettuce or cabbage, smoked ham or seafood or all of the above)
Saute all the ingredients (except the rice) using the oil. Adjust salt to taste.
Add rice sautéing with the rest of the ingredients. Fluff the rice using a fork. Serve hot.
Before starting to cook: Dice the pork chops into small cubes. Reserve.
