WACKY CAKE

This is a cake recipe that I first learned to bake with. It was also my daughter’s first cake. It is just about foolproof, and makes just enough -- one 9-inch layer, or 12 cupcakes.

1 1/2 cups flour
1 cup sugar
4 tbsp. unsweetened cocoa powder
1 tsp. baking soda
1/4 tsp. salt
1 cup cold water
1/3 cup oil
1 tbsp. vinegar
1 tsp. vanilla

Preheat oven to 350 degrees F. Grease 1 (9-inch) layer cake pan* or 12 cupcake cups.

Mix together dry ingredients.

Mix together wet ingredients, and add to dry. Mix well. Pour into greased pan.

Bake 25 minutes at 350 degrees F (may need less time for cupcakes).

*If you want to turn the cake out, line the pan with wax paper, and grease it.

Kids love to decorate. Give them some frosting and a selection of toppings and turn them loose.
