This recipe is from Betty Crocker's Collector's 50th Edition. You can also use chicken breasts instead of a broiler-fryer, baking them for only 35-45 minutes.
Oven-fried Chili Chicken
1/4 cup margarine, butter or vegetable oil 1/3 cup Gold Medal all-purpose flour 1 Tablespoon cornmeal 2 to 3 teaspoons chili powder 1 teaspoon salt 3/4 teaspoon paprika 1/4 teaspoon pepper 2 1/2 to 3 pound broiler-fryer chicken, cut up
Heat oven to 400 degrees F. Heat margarine in 13x9 pan in oven until melted.
Mix remaining ingredients except chicken. Coat chicken with flour mixture. Place chicken, skin sides down, in pan;turn chicken to coat with margarine. Turn skin sides up.
Bake uncovered 50-60 minutes or until thickest pieces are done.
Makes 6-7 servings.
Oven-fried Chili Chicken Breasts Substitute 6 small chicken breast halves for the broiler-fryer chicken. Bake 35-45 minutes.
