Crunchy Bran-Coconut Cookies
1/2 cup butter or margarine, softened 1/2 cup granulated sugar 1/2 cup brown sugar 1 egg 1 cup all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon vanilla 1 1/2 cups wheat bran flakes 1 1/3 cups coconut
In large bowl, beat butter or margarine, granulated sugar and brown sugar until light and fluffy, about 5 minutes, on medium speed of an electric mixer. Blend in egg. Stir together flour, soda, baking powder and salt; add to creamed mixture. Add vanilla, bran flakes and coconut; stir until well combined.
Shape into balls; place on ungreased baking sheets. Press with tines of fork to flatten.
Bake in preheated 350F oven for 10-12 minutes, or until golden. Remove to wire rack; cool.
