Hi, Gladys. This apricot lemon chicken sounds great. I have been looking for some do-ahead type recipes. My parents are very old (in their late 80's and only my mother can walk a little). I have been making casseroles, freezing them, and driving 70 miles to deliver them. I am very limited because my father is allergic to dairy and onions; my mother despises seafood; and my older brother, who is their main caregiver, doesn't eat wheat! So what to do? Your recipe sounds wonderful and I can just get them a boil-in-the-bag package of rice, and voila! Dinner. I'll be spending the next few hours reviewing the rest of your wonderful posts, so pardon if I don't respond to every single one of them as I start dreaming about making them! You are a treasure-trove of knowledge and I appeciate all of the time you take to impart that knowledge.
