German Pancakes

6 eggs -- separated
1/4 cup flour
1/4 cup melted butter
1/4 cup milk
1/2 teaspoon salt

Beat 6 eggs, separated; add to the yolks flour, butter and milk; season with salt, and fold in beaten egg whites. This batter, 1/8 at a time, is cooked in plenty of butter in a large skillet. When edges curl, turn and brown on the other side. The same pancakes--spread with applesauce, jam, jelly or other fruit or rum sauce, rolled, and served with sugar and butter--make a superb dessert. These pancakes can also be cooked until firm on one side, then placed in a preheated hot oven (400 degrees) for 10 min. or until puffed and golden. Can be cut into wedges and served. German Apple Pancakes: Pour batter in skillet. Top with very thinly sliced apples and cook until pancake is golden brown. Turn and brown on the other side.
