Apple Couscous Pudding From Low-Fat Baking by Linda FraserServings: 4 2 1/2 cups apple juice 2/3 cup couscous 3 Tablespoons golden raisins 1/2 teaspoon apple pie spice 1 large tart cooking apple, peeled, cored and sliced 2 Tablespoons raw sugar plain low-fat yogurt, to serve Preheat the oven to 400 degrees F. Place the apple juice, couscous, golden raisins and spice in a pan and bring to a boil, stirring. Cover and simmer for 10-12 minutes, until all the liquid is absorbed. Spoon half the couscous mixture into a 5-cup ovenproof dish and top with half the apple slices. Top with the remaining couscous. Arrange the remaining apple slices overlapping on top and sprinkle with raw sugar. Bake for 25-30 minutes, or until golden brown. Serve hot, with low-fat yogurt.
