BEAN SOUP
2 cups yellow squash or zucchini, cubed 1 1/4 cups dry Great Northern beans 1 (14 oz.) can Italian style tomatoes, chopped 1 (14 oz.) can beef broth 3/4 lb. Italian sausage 1 medium onion, chopped 1/3 cup dry red wine 1 clove garlic, minced
This soup can all be prepared the night before. Put all ingredients into crockpot and refrigerate overnight.
Next morning, plug in crockpot and let simmer all day.
Soup may be served with chopped, well drained, spinach added and Parmesan cheese.
