Turkey Frittata This baked egg, spinach and turkey pie is perfect for brunch.
1 cup sliced mushrooms 1/2 cup sliced onion 1 garlic clove, minced 1 Tbsp. oil 1 cup frozen chopped spinach, thawed, squeeze dried 2 Tbsp. lemon juice 1 cup diced turkey 6 eggs, beaten
Saute mushrooms, onion, and garlic in oil until onions are tender.
Add spinach and lemon juice. Pepper to taste. Continue cooking 3 minutes.
Add turkey and eggs to mixture. Pour into a greased baking dish.
Bake at 350F for 25-30 minutes. Cut into wedges to serve.
