Tomato Sauce with Fresh Herbs
In 2 tblsp olive oil saute: 1 onion, chopped 2 celery stalks, chopped 3 clove garlic, crushed 1/2 green pepper, chopped 1 small zucchini, chopped
Saute for a few minutes
Add: 1/2 cup Italian parsley, chopped 1/4 cup fresh basil, chopped 3 tablespoons fresh oregano, chopped 2 tablespoons fresh rosemary, chopped 2 stalks thyme
Add: (a note from Betsy at TKL: can sizes not provided in submission) 2 cans tomatoes, chopped 1 can tomato sauce 1 tablespoon tomato paste salt & pepper
Simmer for 1 hour Remove thyme stalks
Enjoy on pasta with some grated parmesan cheese.Bonne Appetit! |
