Spicy Ham and Black Bean Soup
1 cup (about 1/3 pound) cubed cooked ham 1 cup salsa 1 (15-ounce) can black beans, rinsed and drained 1 (14-ounce) can low-sodium chicken broth 1 green onion, sliced (optional)
Serve with whole-grain crackers and sliced apples
In a large saucepan combine ham, salsa, beans and broth. Bring to a boil over medium heat; reduce to low and cover. Simmer for 10 minutes.
Ladle into soup bowls; garnish with onion if desired.
