Here's a quick idea for a lunch or easy dinner.
Buy the biggest baking potatoes you can find, wash them well, prick them all over and bake at 450° for 50 min. or so. Remove from the oven and let them cool until they're easy to handle.
Slice open the potatoes lengthwise, scoop out as much of the potato flesh as you can without tearing the skins. Place the potato flesh into a large bowl. Add 1 Tb. sour cream & 1 Tb. butter or margarine for every cup of potato (guestimate -- doesn't have to be exact).
Drain 1 (16 oz.) can of corn for every 4 potatoes cooked, and add the corn to the potato mixture. Dice leftover ham slices and add 2 cups of the ham to the potato mixture. Season with salt and pepper to taste.
Pack the potato mixture back into the skins, and grate cheddar cheese over the tops of them. If your oven's still hot, place the potatoes back into the oven for a few minutes 'til the cheese melts, or else you can microwave them for 30 - 60 seconds.
Serve with a tossed green salad & bread, and it's a great meal!
