Spinach with Lentils
1 lb fresh spinach (or 1 (12 oz) package frozen chopped spinach, thawed) 1/2 cup orange lentils 1 cup water 1 green pepper, diced 1 onion, diced 1 clove garlic, minced 2 tbsp mustard 2 tbsp unroasted curry powder 1 tbsp turmeric powder pinch cinnamon (optional) pinch lemon grass (optional) 1/2 cup coconut milk salt to taste
Clean spinach and cut into small pieces. Wash lentils and mix with spinach in a saucepan.
Add water, green pepper, onion, garlic, and all spices.
Boil for 10 minutes at medium heat.
Finally, add coconut milk and salt and continue cooking for 2 minutes on low heat. |
