Broad Beans with Ham
4 spring onions, finely chopped 1 red pepper, seeded, pith removed and chopped approx 3 oz (84g) Serrano or Iberico Ham, diced approx 1 lb (450g) shelled broad beans 1/2 cup dry white wine salt and ground black pepper fresh parsley, chopped
Heat some olive oil in a frying pan. Add the chopped spring onions, the chopped red pepper and the diced ham and cook for 2/3 minutes.
Now add the beans and cook for 2 minutes.
Add the wine, bring to the boil, cover and simmer for about 20 minutes. If there is any excess liquid after 20 minutes of cooking, remove the lid and continue to cook for 2 minutes allowing the liquid to evaporate. Add a pinch of salt and ground pepper.
Just before serving, sprinkle with chopped parsley.
