Stir Fried Beef and Broccoli
This quick stir-fry is made even simpler using salad bar vegetables.
1/2 lb. beef sirloin steak, sliced into thin strips 2 Tbsp. lite (reduced sodium) soy sauce 1 clove garlic 2 Tbsp. cornstarch 2 tsp. sugar 2 cups broccoli florets 1/2 cup sliced green pepper 1 cup sliced mushrooms 1 Tbsp. oil 3 Tbsp. sherry Optional ingredients: 1/2 cup tofu other vegetables: bean sprouts, celery, and bok choy
Stir-fry beef, tofu, garlic, mushroom, green pepper (any optional vegetables), and sugar in hot oil. Stir in sherry and soy sauce. Cook 2-3 minutes. Remove meat and vegetables and set aside.
Add broccoli and 1/2 cup water. Bring to a boil. Stir and continue cooking covered 2-5 minutes. Add meat mixture.
Combine cornstarch and 1/2 cup cold water. Stir into meat mixture. Cook and stir 2-3 minutes until lightly thickened. Serve over cooked rice.
